Following an initial selection in the vineyard, the grapes are hand-harvested and transported to the winery in 20 kg crates.
A second selection is carried out on a sorting table. The grapes are then destemmed and gently crushed before being transferred to stainless-steel fermentation tanks.
Alcoholic fermentation takes place under controlled temperatures. During fermentation, various winemaking techniques are used to optimize extraction and showcase the work carried out in the vineyard.
Ageing: 11 months in 225 L French oak barrels.
Tasting notes
Ruby red in colour. The nose reveals aromas of ripe red fruit and fruit compote, complemented by subtle spicy notes. On the palate, the wine is velvety and well structured, with the oak integrating harmoniously with the fruit. The finish is long and persistent, carrying through the same aromatic profile.
Food Pairing: Red meats, game, flavourful dishes and cheeses.
