Established since the Gallo-Roman era, the vineyards benefit from an ideal south to southeast exposure, promoting optimal grape ripening. Managed with rigor and deep respect for living systems, the vines receive constant care within a sustainable and committed approach. This philosophy was formalized through a conversion to organic farming initiated in 2018 and fully certified in 2021.

Tasting notes

This Vézelay 2023 displays a pale yellow hue with silvery highlights, bright and clear in the glass. The nose is precise and elegant, built around a distinct minerality reminiscent of flint, layered with notes of white-fleshed fruits such as pear and apple. A subtle exotic touch of mango adds depth, supported by a fine saline nuance and a light hint of brioche that brings additional complexity.

On the palate, the attack is clean, saline, and delicate, driven by well-controlled freshness. The mid-palate is balanced, offering a supple texture and well-integrated structure. The finish is long and elegant, extending on a mineral backbone with a slight tension that enhances persistence. Overall, the wine shows a focused, precise style, clearly oriented toward freshness and gastronomic pairing.

Thanks to its vibrancy and minerality, this wine pairs naturally with seafood, including oysters, tartares, and grilled fish. It also complements goat cheeses, poultry with light sauces, and vegetable-driven dishes with citrus or herbal accents, where its balance and finesse can fully express themselves.
