This cuvée has been elaborated in memory of Alexis Davault who, in 1850, produced Chenin Blanc vinified in barrels, already in SAINT GEORGES SUR CHER, on clay-siliceous slopes of the left bank of the Cher.
The means of pressing used today are not the same as in Alexis' time, because we now use pneumatic presses. The musts are placed in vats for 24 hours. Then we rack the must, taking care to draw only the clear juice. The must is then filtered and blended. The alcoholic fermentation (F.A.) lasted 3 weeks in barrels. A racking was done at the end of the AF and then the wine was aged on fine lees, still in barrels, until bottling.
Tasting notes
Beautiful bright light yellow color. The nose offers aromas of exotic fruits and white fruits. The mouth is round in attack with volume and a well-balanced acidity. Long aromatic persistence and a beautiful complexity. Fruity and harmonious harmonious wine.
Perfect with fish, seafood, goat cheese and even as an aperitif.
