Tasting notes
The Rôcalin presents a clear ruby red color with pink hues. The bouquet is characterized, predominantly, by spicy aromas (clove, star anise), but floral and black fruit aromas (blackberry, cassis), plum, cherry and a smoky note are also present. In the mouth, the wine is full and moderately acidic with a good tannic structure. The aftertaste is pleasanty persistent.
Food pairing: typical Piedmont cuisine (agnolotti, tagliatelle, risotto, gnocchi and lasagna), white truffle dishes, roasted meats and cheeses of the region like the Raschera. (Raschera is a raw, pressed and semi hard paste cheese. It has a fine and delicate flavour, slightly spicy and salty. It is somewhat similar to Muenster cheese.)
